MERINGUE by Abney was born during the COVID lockdown in 2020. I was chef/owner of NANCY by Abney (@NANCYbyabney), an intimate fine dining restaurant on a resort island, that was named Top 100 Restaurants in America by OpenTable in 2019. The restaurant was on fire, and then boom! COVID. We had to close. Meringue clouds were our signature dessert and a true passion of mine. I have studied cooking and food in Paris for 10 years and developed an obsession with the magic of meringue. I had the idea of MERINGUE by Abney for years, but didn’t have the time to execute given the demands of a growing restaurant. The blessing of the lockdown was that I had the time and focus to give to MERINGUE by Abney.
